I am looking for a Mesh solution for a new house. I saw the RBK23 model and am intersted in it. The house is three floors but the top floor is just a bonus room. So, I would place one unit on each...

Depends on the distance from the router or satellite out to your garage. I got great singal from my friends RBK50 system at his house after I got it setup. I left that day and got in my car which was at least 30 feet from the house. I had full signal and internet access with my phone sitting in the car. Not sure if the 23 series has the same power though...
I prefer wired anything over wireless if there is a possibity of using it. Yes, use of non managed switches should not effect the Orbi. I have several connected with mine and two in between my router and 1 satellite. Zero issues.

Thanks again for all the help.
The main unit will be in a closet not far inside the front door. And it sorta backs up to the garage. So, really close, but I hate that it has to be in a closet.
As far as the back yard goes, that's a bit further but I'm also hoping the satellite on the second floor will be close"ish" to the back side of the house.
Worse case scenrio is I will eventually buy one of the outdoor units. But that will not be connected via cat5.

It should work, but you may have to play with where to place them for optimal coverage. The Wireless backhaul gives you flexibility with positioning the Satellites -- it doesn't have to be near a jack and can be placed near a window to cover the outside area.
