I've gone through every setting and sub folder within my Uverse BGW210-700 modem and not once did I see a spot that allows you to change the DMZ. Could it be called something else?

Might contact your ISP and ask them about DMZ. They will know. It's probably in the menu someplace. It will say DMZ or DMZ plus.
