When Factory Reset, they return to the WiFi credentials printed on the label (bottom of the case). Is that what is happening?
The default password is working on the satellites (that is the only Orbi that's connected to the eero network (via ethernet).
The web interface of the Orbi satellite is showing all the devices and wireless connection types. How do I interpret this? Is it possible that the WiFi features of the RBS is functional even when the RBS is connected to the eero 7 Max?
Wired connections I can understand. But WiFi cannot be inter-operational between Orbi and eero, can it?

This satellite is the only Orbi unit that is powered on, correct?
Yes. As single RBS is the only device hanging off the Ethernet (connected to the eero Max 7 network). The eero network has 2 devices (eero Max 7 base and satellites are all the same) connected by Ethernet.
You may have noticed that I prefer Ethernet over WiFi to the extent possible. 😀
