One or the other.
Put the ATT BGW320-500 into bridge mode, and leave the Orbi in router mode.

Or use the ATT BGW320-500 as a router with the wifi turned off – leaving it on won't do any harm beyond on confusing other things on the network – and put the Orbi into AP mode.
You will hit this:

But your router should deliver what you need. If not, try the "bridge mode" option.
I read that the satellites wont connect without a DCHP server, but I can't find a procedure on how to do that.
Not sure where you read that. It is wrong.
One issue with AP mode is finding the IP address of the Orbi when it is running. One way around that is to look on the page in the graphical user interface (GUI) where you put it into AP mode and ignore the advice not to fix the IP address.
