The Orbi router actic as an access point still uses its WIFI power and gives you the WIFI coverage you need. It just no longer ussies IP addresses to what's connected to it.
I'm pretty sure from your description that the Fritzbox is distributing IP addresses, unless you went into the settings and changed it to bridge mode and disabled the DHCP server.
A DHCP Server is a network server that automatically provides and assigns IP addresses, default gateways and other network parameters to client devices

Is your Fritzbox 7580 acting as a DHCP server as well as your Orbi router?
Maybe try putting the Orbi in AP mode and see if it works.

I don't want the Orbi router to interact as an "access point". I bought the Orbi router because the Fritzbox's WiFi is terribly bad.
What exactly do you mean by "DHCP Server"?

"(...) unless you went into the settings and changed it to bridge mode and disabled the DHCP server" - I haven't done anything like that. I only connected Orbi to the Fritzbox, deactivated the WLAN on the Fritzbox and the WLAN has been great since then! (I thank NETGEAR for that!)
In addition, I deactivated NAT and SIP in the NETGEAR Orbi settings and forwarded the "necessary" ports of the Cisco SPA112.
I have not made any further settings.
Let's assume I switch the NETGEAR Orbi to "Access Point". What exactly happens then? What exactly do I have to do then so that the Cisco SPA112 finally works? Do you have an idea?

My fax machine is now working! I have now set the NETGEAR Orbi to "Access Point" and it worked right away!
