Lets check a few things first before adding any more satellites. What you have should be already enough.
What Firmware is currently loaded?
What is the Mfr and model# of the ISP modem the NG router is connected too?
What is the size of your home? Sq Ft?
What is the distance between the router and satellite(s)? 30 feet is recommended in between RBR and RBS to begin with depending upon building materials when wirelessly connected. https://kb.netgear.com/000036466/How-far-should-I-place-my-Orbi-satellite-from-my-Orbi-router
What channels are you using? Auto? Try setting manual channel 1, 6 or 11 on 2.4Ghz and any unused channel on 5Ghz.
Any Wifi Neighbors near by? If so, how many?
Try disabling the following and see:
Armor, Circle, Daisy Chain, Fast Roaming, IPv6 and Set 20/40Mhz Coexistence to 40Mhz only. Save settings and reboot the router and satellite(s).
You may have a faulty ring door bell device as well. Try a different door bell unit.

Home 3500 sq ft
All units stacked on 3 floors above each other, outdoor one in garage.
Router settings cannot be discerned thru Optimum
I have app on phone but don't see how to change channels but have done before with other routers
No Armor or any of that type.
Bell connection for viewing is on and off when I try to access and alert works fine when someone comes to the door. Alerts thru all Alexa devices. Connected to doorbell power, battery constant charge (Ring 2)
Bell shows signal strength of RSSI-49

That size of home having two is enough. I'd maybe turn OFF one and test.
To change channels on the Orbi system you have to log into the RBRs web page at orbilogin.com with a PC or laptop with a web browser.Try setting manual channel 1, 6 or 11 on 2.4Ghz and any unused channel on 5Ghz.
Any Wifi Neighbors near by? If so, how many?Try enabling Beamforming and MIMO(MIMO may or maynot be needed) and WMM. Under Advanced Tab/Advanced Settings/Wireless Settings
Try disabling the following and see:
Armor, Circle, Daisy Chain, Fast Roaming, IPv6 and Set 20/40Mhz Coexistence to 40Mhz only. Save settings and reboot the router and satellite(s).Also you might update FW on the RBS then RBR at some point. v2.5.1.8 is currently released and most stable.
