Network Map hardwired RBR50, RBS50, RBS50
Using RBR50 + 2xRBS50 in AP mode. All three hardwired (ethernet). On the Orbi App, my 2 ethernet RBS50 satellites have magenta dots in the orbi app and it says connection type is offline. On the ...

My suggestion: ignore the "app". What is the firmware version on these Orbi units?
There is an entire forum devoted to the Orbi "app": https://community.netgear.com/t5/Orbi-App/bd-p/en-home-orbi-app
People who participate in that forum are more likely to have experience with the app. I, for example, only activate the app when someone asks a question that piques my interest. I go weeks without opening it, whereas I use the web interface 20 times a day.

All three are on 2.5.1.8. Also, they are all three connected to a Netgear GS752TP switch. It is also connected to a google fiber box which provides the DHCP. That's why I am using the RBR50 and RBS50s as access points (google fiber wifi is turned off).

Sorry, I skipped right over AP mode at the top. (have to s-l-o-w d-o-w-n).
Orbi decides things are "online" by connecting to a Netgear web site to retrieve a small file. I think this is a failure of the "app" code.

You switch is a managed switch. BE sure to disable ALL IGMP protocols and any Green Ethernet (EEE 802.3az) on this switch. These are known to cause problems with Orbi systems.
Be sure to connect the RBS using one of the configurations seen here:

OK - I unplugged the two satellites from Ethernet and everything is green now on the orbi app (the satellites are connecting via 5Ghz wireless). I am unable to disable the IGMP snooping on the managed switch as it is required for something else on my network (I have a video distribution system over ethernet).
I though I was following one of the configurations as all three orbi devices were plugged into the switch.
As this is above my feeble understanding of networks, am I better off:
1) Going back to the satellites plugged into ethernet (makes the orbi app show magenta, but web interface seems okay). IGMP snooping still enabled on the switch.
2) Leaving it like it is now (RBR50 plugged into managed switch, satellites wireless. IGMP snooping still enabled on the switch)
3) Plugging satellites into the RBR50 ethernet ports rather than switch ports. IGMP snooping still enabled on the switch.
-or- do I need to find a way to disable IGMP snooping for my wireless to be reliable?
