What Firmware version is currently loaded?
What is the Mfr and model# of the ISP modem the NG router is connected too?
Orbi does broadcast 1 SSID, it's your camera who is detecting each of the signals from the RBS and RBR and displaying them separately. Try turning OFF the RBS leaving the RBR online and then set up your camera.
What is the distance between the router and satellite(s)? 30 feet is recommended in between RBR and RBS to begin with depending upon building materials when wirelessly connected. https://kb.netgear.com/000036466/How-far-should-I-place-my-Orbi-satellite-from-my-Orbi-router

Thanks FURRYe38. Some answers below:
Firmware V2.5.1.16
The router is connected to an AliceOne box - Its made by Sagecom - model DGCI384. After a bunch of back and forth with the ISP, I was finally able to get them to just use the box as a modem and let me use the Orbi as the router.
The RBS that was the closest to the problematic cameras (Satellite-3) was less than 10 feet and it was daisy chained to another satelite with less than 30 feet distance between each.
I went ahead and just removed that satelite completely and a few interesting things happened:
For a few minutes in the network map, it showed multiple instances of another satellite (Satellite-4). Also, I started watching the cameras that are having issues in the list of attached devices. When they lose the connection, it says they are connected to "Orbi Satellite" with no number after it for a few seconds and then it reconnects to a numbered satelitte.

The RBS in the closet would not be recommended. 10 feet is too close if thats the distance between it and the RBR.
Did you reboot the RBR after turning OFF the RBS and then let the cameras connect to the RBR alone and see if the RBS status on the RBRs web page shows disconnected?
Has a factory reset and setup from scratch been performed since last update?
What channels are you using? Auto? Try setting manual channel 1, 6 or 11 on 2.4Ghz and any unused channel on 5Ghz.
Any Wifi Neighbors near by? If so, how many?Try enabling Beamforming and MIMO(MIMO may or may not be needed) and WMM. Under Advanced Tab/Advanced Settings/Wireless Settings
Try disabling the following and see:
Armor, Circle, Daisy Chain, Fast Roaming, IPv6 and Set 20/40Mhz Coexistence to 40Mhz only. Set Short preamble instead of Long preamble modes. Save settings and reboot the router and satellite(s).
