Orbi RBK50 or SRK60
Looking at upgrading my Wifi at home and come across these two Orbi units (RBK53 and SBK60B03). I would probably wire the main Orbi into my current Asus 68U Router and turn the Wifi off on the Asus, can I still use all the features on the Orbi app for both models. What is the difference in the two models?

The SRK system is a Pro Business class Orbi. The RBK is the home class Orbi. Something which would be better suited for your home needs.
Yes. you can run the Orbi system in AP mode with a host router infront. https://kb.netgear.com/31218/How-do-I-configure-my-Orbi-router-to-act-as-an-access-point
