What FW is currently loaded?
What is the Mfr and model# of the ISP modem the NG router is connected too?
You can't disable the 5Ghz radio. You can lower the power out put of the 5Ghz radio to see if that will help.
What device are you trying to connect on 2.4Ghz. If it's a 2.4Ghz supporting only device, it will not try to connect any 5Ghz wifi.
What is the size of your home? Sq Ft?
What is the distance between the router and satellite(s)? 30 feet is recommended in between them to begin with depending upon building materials.
What channels are you using? Auto? Try setting manual channel 1, 6 or 11 on 2.4Ghz and any unused channel on 5Ghz.
Any Wifi Neighbors near by? If so, how many?
What WPA security modes are you using? Try disable WPA on the Orbi router temporarily. Does the device connect then? Then enable WPA2 and AES only and test.

The orbi is connected to a Sagemcom 5250 modem
It is located on the top floor of our home (approx 3500sqft). The utility company explained that that was the strongest signal strength to cover the home.
The main Orbi router is plugged directly into the service
Providers modem and the satelitte is located on the main floor approx 40ft away. Signal strength on the entire home is great however the unit in question is a SkyTrak (golf simulator). I’ve been told by the manufacturer that it don not connect to a 5g network so with the satellite being on the main floor my hope is I would be able to connect to the Orbis wifi network and not the service providers since that is two floors up and choppy at times.
It is set to auto and was going to attempt to change over to another channel and will follow your recommended numbers to start.
Lots of wifi neighbours pop up on the drop down menu and I feared this is causing some of the interference. I have no idea how I could prevent that though?
Orbi is set to wpa2 which the Skytrak also requires. Will attempt the restructure as you’ve also stated.

Your ISP modem is a modem/router combo:
Couple of options,
1. Configure the modem for transparent bridge mode. Then use the Orbi router in router mode. You'll need to contact the ISP for help and information in regards to the modem being bridged correctly.
2. If you can't bridge the modem, disable ALL wifi radios on the modem, configure the modems DMZ for the IP address the Orbi router gets from the modem. Then you can use the Orbi router in Router mode.
3.
