I have a router and 2 satellites. One satellite is wifi backhaul, the other is wired backhaul.
When I telnet to the router and ping the wired satellite, I average 0.6 ms (rounding). When I ping the wifi satellite, my pings average 3.3 ms (rounding).
In both cases my mins might be half of the average, and my max might be twice the average. That still only puts me a few ms apart, far from the variation that you are seeing.
My sattelite info lists for the wifi backhaul satellite details:
"backhaul conntype" : "5GHz",
"backhaul rssi" : "-55",
"backhaul phytxrate" : "1170",
"backhaul phyrxrate" : "1170"
I kind of find the rssi interesting as the router is on the first floor, the satellite on the second floor, with a number of walls along the way; they are not directly above each other. But hey, I'm not complaing. Once could argue, these might be too close.
The router and the wired satellite are on the ground floor about 60 feet apart with of course walls along the way. Without the direct cable, the connection between the two was unstable at these locations with the devices flipping from blue to pink randomly; hence, it appeared I was at the edge of its connection range for these two.
I only give you the above as a point of reference.
Personally, I feel your router and satellite are too close together.
What happens if you pull the satellite out of the mix and just have the router?

I found a different thread that described most of same issues and the solution was to downgrade to a previous stable fw version. However, i am not able to find relevant info on downloading previous FW and installation instruction for downgrading. The thread is here

Replacing Orbi firmware is tedious, but not too difficult - especially if one has a computer to wire to the Orbi.
Browse to https://netgear.com/support Enter the model number RBR50 and click on Downloads. There is a link to firmware 2.3.5.30. Download the zip files for both router and satellite. Unpack (unzip) the files to extract the .img files.
Then use the Orbi web interface, Advanced Tab, Administration, Firmware Update, and select the "Manal Update" tab.

thanks, took a little to find a little pull down to get previous FW, and discovered that i had to connect from browser to manually install fw for the satellite. Installing it soon ish and will report results back. Thanks!
