I'm sorry to tell you, you're not missing anything. You haven't failed to configure something and you don't have some terrible interference issue. The problem is the Orbi backhaul (WDS) and it's terrible. There is nothing you can do to solve the issue, however, I can tell you how to verify the issue.
The next time your MacBook Pro has connectivity issues on a satellite, use ifconfig to change the MAC address. After you get a new DHCP address (or assign yourself another one manually), your macbook will start working again. Why? Because the issue are layer 2 backhaul issues.
