Would be helpful to know what is the Mfr and model# of the Internet Service Providers modem/ONT the NG router is connected too?
I thought the ERX router has a max WAN to LAN speed of around 300Mbps limitation? Your seeing near 900Mpbs thru it on the wire?

For the EdgeRouter X it is capable of Gigabit speeds but without offloading your speeds will be greatly decreased.
Hardwired into my switch I can get 900+ depending on network traffic, right now I just did a speed test and seeing 853Mbps but kids are online gaming, streaming
My Setup is Hitron CODA-4582U ---> Ubiquiti EdgeRouter X ---> TredNet Gigabit Switch ---> ORBI RBR20 in AP Mode (25+ Wifi devices, including ipads, phones, firesticks, smarthome devices), Desktops, Security Cameras

The Ubiquiti EdgeRouter X in front of the Orbi can cause issues.
Try Hitron CODA-4582U ---> ORBI RBR20 in AP Mode ---> TredNet Gigabit Switch ---> (25+ Wifi devices, including ipads, phones, firesticks, smarthome devices), Desktops, Security Cameras
So your issue is more than likely that you have a Hitron CODA-4582U, which is a full router going to your Ubiquiti EdgeRouter X, which is also a router to you Orbi RBR20. I'd remove the Ubiquiti EdgeRouter X, if you do not need it.

Why would you put the orbi between the switch and the router? If you ever have to reboot the orbi it takes down the whole network but when it's connected to the switch like it is it's basically operating just as a device which would only affect wireless devices. Also you're pushing all internet traffic through the orbi with it before the switch which would be overloading the device unnecessarilly.
I have had it this way for 8+ months and have never had an issue and my network is the most reliable it has ever been. All my wired devices always are up and runing without interruption and if i have a wifi issue it only affects those wifi devices and nothing hardwired.

Sure It wouldn't matter much if the Orbi is in AP mode, unless the switch, like some smart and green switches, causes issues.
I guess it depends on how you want your network configured.
Most users are purchasing an Orbi system to replace all the routers and access points. Using it as a WIFI system in AP mode is fine, just no benefit at all.
You are pushing the traffic through the system anyway, there is no overloading the device and if so the switch wouldn't be able to handle the load as well.

FYI I have no problems right now, everything is working at full speed now that I'm using a decent router and just using the orbi for wifi, infact it's actually much better now than it was when the orbi was on an older firmware that was actually working ok.
The Hitron is in bridge mode so it's only acting as a modem so your assumption is wrong. Also a router behind a router would work perfectly fine, redundant and a little slower but will generally work, the only time if would become an issue is when you're trying to do any NAT and VPN stuff.
The Orbi router portion is the issue for me as the wifi and the hardwired devices all experienced a slow down when it's in routed mode when connected directly to the hitron or even behind the ubiquiti. The latest firmware killed it for me and the only solution that worked was to replace the router portion with a ubiquiti and let the orbi just handle the wifi. The good thing about doing it that way is I know my wifi will stay just like it is because I am able to block the orbi from downloading any new firmware and even checking for them for that matter. So now anything that netgear forces to be upgraded will not affect me and my wifi will continue to work as it does now. The EdgeRouter handles all my NAT, DHCP, and VPN and does it flawlessly and reliably.
I have successfully fixed a colleagues network who was also experiencing the exact same problem as I was. I mirrored my current setup with the EdgeRouter inbetween the modem and their orbi and put the orbi in ap mode and they have not experienced any issues since it was done.
I would highly recommend anyone having an issue with the orbi and slow speed to try my setup, the EdgeRouter is pretty cheap considering how powerful it is but the only downfall is for the standard home user configuring it will be a problem since everything can't be handled through the gui interface and certain things will need to be done through command lines.

You mentioned being wrong about the double NAT scenario. Since many more people are working from home, NAT and VPN stuff, as you put it are becoming normal setups. It's not too important for homeonwers, unless someone is an avid gamer, then they will likely experience a number of connectivity issues, when trying to play online.
