When in AP mode, you can set a STATIC IP address ON the RBR when configuring AP mode. There are two selections under AP mode, Dynamic were it gets an IP address from the host router then Static where you can set a IP address, Gateway, and DNS. I use Static all the time when I use a RBR in AP mode.

I've tried logging directly into the RBS50 via HTTPS on port 443 and the option does not present itself. When I login directly to the RBS50 I see Status | Connected Devices | Firmware Update | Logout. Is there a hidden section where I can do this? Perhaps a terminal command line interface on a different port? I would prefer NOT to set the IP via DHCPD.

Either way works. I didn't want to be too prescriptive. Not everyone has the same needs.
Router or AP. Take your pick. And read the manuals for guidance. The Orbi manual explains both options.
I prefer "Address Reservation" because I can see all the reserved IP addresses in one place.
