Satellites Don't Show (but are connected) and Poor Wired Throughput
Okay, enough's enough.
Since day 1 I have had an issue with the satellites not showing up (or occasionally showing up then disappearing again) on orbilogin. They will still pass along their wired and wireless clients (though at below-expected speeds) whether or not they show up. A minor glitch, perhaps, but very frustrating anytime you are trying to troubleshoot any connectivity problem.
Now the worst part: I have a dedicated PLEX server on my wired network, going to an AppleTV on that same wired network, and I cannot stream even low-bitrate videos without pauses. Meanwhile I can stream fine on wifi (as long as the wifi stays connected, see below). With my previous router (WRT1900ACS) there were never streaming problems and there are have been no changes to the wired portion of my home network.
Okay, fine...but why is it that devices on the wifi network will randomly drop connection? Oh, no, the bars show full. Oh yes, I've tried turning wifi off and on again on the devices. And yes, if I simply turn off wifi, Verizon will load the site/video/game immediately.
I spent $400+ for an effective mesh network that will seemlessly cover the entire house in current-generation wifi without the need for separate SSIDs and effectively manage my wired networking needs. Except it doesn't.
I have my router in the garage, connected directly to my modem, satellite #1 central to the house on the same floor and about 25ft/3 wooden walls away, and satellite #2 in the basement around 50ft/1 wooden wall away from the router. I have updated all three to the v2.0.0.76 beta firmware (in hopes that this issue would resolve). At this point, even will all three pieces in the garage, with a fresh hard reset, the satellites still aren't showing up (but can be accessed directly through their IP addresses).

To top things off, now the satellites are communicating with the router (as evidenced by the SSID change) but are still using the default password, even after reboot. Also, they are showing blue rings.

Everything you describe strongly indicates the satellites do not have a good connection to the router. 50' is almost certainly too far away. 25' with 3 walls between must be too far also.
For the system to work properly, you must place the router and satellite such that they have a strong wireless connection.
Move things so they are closer and/or have fewer walls between.
Also, why do you have devices on two networks? Your attached devices list shows some devices on 192.168.1.X and some on 10.0.0.X. This is not normal and could indicate another problem.
As stated at the end of my original post, I placed them all in the same room (the garage) and still had the problem. Also, as far as it may have been, they were all connecting and allowing connected devices internet access.
As for the 192.168.1.X vs 10.0.1.X... I have a few devices with dedicated IP addresses and hadn't reset the router's IP address to the 10.0.1.1 that it was before the hard reset.
As a quick update, I have unchecked the following boxes:
-Enable 20/40 MHz Coexistence
-Enable Implicit BEAMFORMING - Boosts WiFi speed, reliability, & range for all mobile devices
-Enable MU-MIMO
and left all other boxes checked on the Advanced Wireless Settings page. As of now, both satellites are showing on orbilogin.com, I am having no throughput problems, and wifi coverage has been amazing. It's only been a few hours (thus no update here) but I am hopeful.

I didn't catch the comment about all devices being in the garage when I first read your post.
It's good to hear things are working.
I can't tell from what you posted, but if you hard-wired IP addresses into any of your devices, you would need to change the default address range of the DHCP server on Orbi to exclude those addresses, so Orbi doesn't hand out duplicate addresses. It would be better to let Orbi handle all address assignments, to avoid conflicts. You can reserve specific IP addresses within Orbi if you want to keep some devices with dedicated addresses.
