Problem is solved. I had a workaround - I used another Android phone to setup and link the Orbi Voice (RBS40V) with Amazon Alexa.

Did you reboot the mobile device after uninstalling Orbi and Alexa apps?

Thanks! I did that as well before I uninstalled the apps To me, it looks like the Orbi setup app is storing that information in the phone like a Registry entry on Windows which is helpful so you do not need to reenter that information but in my case it's the opposite. lol
The app developer must have forgotten to include the "logout" or "enter another credential" functions. I hope someone knows how to remove that saved information from your phone so the app will force you enter your login credentials.

Yes. I did reboot my phone after uninstalling everything and then I reinstalled the Orbi app to proceed with the setup. But the incorrect Amazon credentials are still there and it did not let me enter new credentials when I tried again.

If you open the RBS40V from the network map in the app and click on Details there's a button to log out of your Amazon account there.

Hi! As you can see from the first photo, I cannot logout as I am not actually logged in as the Orbi Voice is not linked to any Amazon account yet. And I am afraid that if I proceed on linking it to the wrong account, it may cause more issues trying to sort things out.
Whenever I tap on the "Amazon Account" box on the first screen/photo, I get presented with the 2nd screen/photo.
The design of the Orbi setup app is flawed as there is no way to re-enter another Amazon credentials once you entered them in so you're stuck with them just like in my case.
The solution I can think of with regards to the the app is to allow user to enter credentials and default the user id (and password), from the previous session once you click/tap on the "Login with Amazon" button instead of forcing user to use the unwanted credentials.
