I think you should have a Starlink ethernet adaptor in order to offload using Ethernet port.
Could you please run a continuous PING when the device offloaded to WiFi or Ethernet and check whether this will improve the stability of the data connection?

Just want double check, you wouldn't see the issue when you connected the WiFi devices directly to Starlink WiFi router.

Correct. I do not lose Internet connectivity when connecting to Starlink WiFi Router.
Seems we can reproduce the issue internally with WiFi and ethernet offloading. The data connection got lost after about an hour. A ticket has been created to have the issue addressed asap,
