You also have the standby functionality see page 42 of the manual: https://www.downloads.netgear.com/files/GDC/MR5100/MR5100_MR5200_UM_EN.pdf
Try to change the timer. (increase the time when going into standby).

It's set to 30 minutes. Machines are connected, so it can't be on stand-by.

It could also be the autoswitching option in your phones that automatically switch to your mobile connection when the Wi-Fi signal is too weak See if it is activated..

The Phones are litteraly sitting next to the router and network power is set to max.
The feature you talking about is an offload, it does not disconnect the phones from wifi.
All the phones are working fine with several other routers, so they are NOT the cause of the issue.

You do get disconnected from Wi-Fi when your smartphone decides that the Wi-Fi signal is too weak and will switch to the mobile band. That is is the whole purpose of that feature. If you look closely you will see that data is going trough your mobile connection. After a while you will get back to Wi-Fi. You can see what IP address that you received.
Troubleshooting is always an elimination process.
The routers that you tested it are/were it all Netgear ones.
