What exactly are the the plans and intentions?
Technically, you can map any SSID, any band, to any VLAN and IP subnet - permitting these VLANs and subnet exist can reach the Internet or other internal VLANs and subnets, and a workable DHCP service is available for each of these VLANs of course.
Keep in mind these WAX2xx are intended for standalone deployments. For supporting seamless roaming, security different from WPA2-PSK for example WPA3-SAE or RADIUS based authentication or other portals, the Insight managed WPA6xx or WBE7xx re much better suited.

Thank you for your reply. I have a 5.0 network now installed on the AP. Now I want to add a second network with 2.4 as they have better range. How do I add a second network?

You can add upto 4 SSID's from wireless settings page, 2.4G, 5GHz, 2.4GHz and 5 GHz dual band.
Open AP page using DHCP IP address, Enable the SSID radio button, configure SSID name, passphrase and apply changes.
