I'm of the idea that overkill is never a bad idea.
But a lot comes down to how many devices and what you're using them for.
the main difference from the WAX620 to the WAX630 is the 630 has triband.
And most IoT devices only support 2.4ghz anyway. So if you don't have many 5ghz devices, do you need a 2nd 5ghz band?
But if you do have a bunch of 5ghz devices that are using more bandwidth (gaming/streaming/etc), then its more enticing to go for more 5ghz availability. Thats more on you to decide.

Most of the devices are indeed based on the 2.4.
Even the HD CAMS use only a few MB/s to operate.
There is a lot of competition with AP.
I’m reading also on UBIQUITI… their AP PRO seems quite good too.

First thing coming into my mind is that already a WAX615, WAX620, or WAX630, or WAX630E goes ways beyond of what the common 1 GbE can deal with. To del with this AP class, you need at least a MultiGig capable (2.5 GbE) networking. Without, this is a pure overkill (or an investment into the future).
Talking of UniFi, there are reasons most of their offerings in the Ubiquiti UniFi AP AC-PRO is limited to 450 Mb/s on 2.4 GHz and 1.3 Gb/s on 5 GHz. Netgear plays at very affordable cost in device classes in the AX3000, AX4500, AX6000, and AXE7200 level. No way to cover this on Gigabit Ethernet.
