AX8 RAX75
I have an ac750 extender. Would a Mesh system work better?

are you talking about purchasing/installing a mesh system like netgear orbi or just adding a mesh extender?
Are you wondering if a mesh extender or AX extender would work better than an AC750? (btw, ac750 is a speed, not a model)

I just installed the AX8 RAX75 router and the extender I have is an old model WN3000RPv3, and it doesnât seem to provide the same signal. So, I just am wondering if a better extender would improve the signal quality in thise hard to reach places, and I thought mesh extenders could be an option. As you can tell, I donât lnow much and I want to make a somewhat informed decision on a possible purchase.

The WN3000RPv3 is an old, single band extender. Not much performance in it :)
There's many options. there's many types of mesh extenders.
You can step up to a dual band extender, a triband (my recommendation), or even a AX extender.
Each has its own pro's/con's.
Tribands tend to have better throughput over the dual bands by a decent margin.
AX will keep the network all AX compatible but are more expensive right now.
so its kind of up to you but any of those are going to perform better than the WN3000RPv3
