I could definetely spread some Ethernet cables to some rooms in different floors.
By that you imply that maybe just some access points could be enough instead of mesh?

I would still use a mesh system. Reason why is a mesh system allows both wired and wireless backhauls.
That allows more options though with the wired backhaul. for example, the nighthawk mesh (mk62 or more) is a dual band AX1800 system but when running with wireless backhaul is much slower. But with a dedicated backhaul, the full speed can be used for fronthaul. Or the AX orbis main diffrence between rbk852 and rbk752 is the backhaul. A dedicated backhaul lets you use a cheaper system and maintain throughput.
