Either case, both devices will get IP addresses assigned from the XR700 DHCP server unless you have configured a static IP config for the AP. It's correct that the EX8000 would be reachable under mywifiext.net or mywifiext.com while direct connected to that device by wireless or another LAN port.
What is confusing me why you want to turn off the SSIDs - if disabled, the AP won't be of much use. Should the device in AP mode supporting SmartConnect, and your XR700 is configured for using SmartConnect, then you can re-configure the AP radios to the same SSID (network name), security mode, and wireless security password (WPA-PSK).
