Have you entered your correct speeds in Bandwidth settings? Are you using Connection Benchmark or speedtest.net?

When I go to change speeds I've tried letting it auto detect and that doesn't detect near what my speeds should be. When I manually input what they should be the connection benchmark is a D on every one of them. When I lower to 500mb and 30 up I can get A/B on connection benchmark.
I have also used speedtest.net Ookla speed test same result high download pings as well.
All test done with ethernet for maximum performance.

No do not get full speeds with qos off

when on 5GHz my speeds greatly decrease though i understand not same as wired but i shouldnt only be getting 100mbs down correct?

5GHz should definitely be faster. Try this:
Use a WiFi analyzer to find the least congested channel and change to that
Ensure it's in an elevated position - not on a metal surface
Ensure there aren't any electrical / wireless devices e.g headphones etc within close proximity ~3 feet if possible
Set the antennae to this position _ | | _
