Sorry to hear you're having these issues.

 

Next time a lag spike occurs, could you go to the System Information page and see if the CPU usage is high?

    So I am getting high pings again and the CPU usage is 40-50% with some periodic spikes. There are only 2 xbox's on the router currently for online gaming.

      Are you using QoS at all? Are ALL devices connected to the router? Also doing those kind of tests would be better on wired devices as wifi can be less reliable.
