Perfectly sufficient. Be aware more channels than just the "one" you can configure are in use.

Now for my question: There are so manny settings and I have been fooling around with them quite a bit but I really dont know what settings I should configure.
Strictly stick with the defaults.

STP is required if you are using any kind of wireless backhaul, to avoid potential loops.
Anything else - as stated above.

Operating a fully wired network with the APs just to connect wireless devices? Or are APs configured to connect multiple LAN segments over a wireless link? In plain AP mode having STP active is an overkill - there is no practical requirement.
Your network is STP (RSTP, MSP) enabled, all the switches are configured accordingly?
What I want to say: Even if there are various options and controls - only few are really required under special conditions.

Given it's quite a large household I would suggest using QoS to eliminate any lag/buffering issues people may have.
