Give your devices a reserved IP address in LAN Settings. The one device that has trouble have you given it static network settings on the device itself? Look on the Device Manager at the table view, do all ports show 1000Mbits link speed? Have you entered your speeds in the Anti-Bufferbloat menu?

I was hoping not to have to go down the path of reserved IP's as I have a lot of devices and connecting them 1 by 1 and assigning IP's will be slow. The one that keeps connecting to an incorrect IP isn't set to static IP as if I plug my old router in it works fine and connects to an IP under 192.168.1.x. All devices are showing 1000Mbits on Network Map. Where is the Anti Bufferbloat menu?

As above, just give a few reserved IPs to the devices that have the most trouble/are most important and see if that helps first. Anti-Bufferbloat menu is on the top left of the panel on the QoS page.
