On the iPhone 13 you will get Wifi6 if you your router supports Wifi6.
You won't get Wifi6e, the iPhone 13 doesn't support it.

That doesnt seem to align. I turned on Wifi 6 only on the router, but I dont see the SSID in the list on my Iphone 13 Max.

There is a difference between WiFi6 and WiFi6E.
WiFi6 means 802.11ax, which all of the Netgear 'AX' Orbi's support. This is a new encoding in the 5G WiFi spectrum.
WiFi6E is a totally new in the 6G radio spectrum.
One tiny letter (E) makes all the difference. Perhaps it would be entertaining to do any internet search on WiFi6E
