What is the Mfr and model# of the Internet Service Providers modem/ONT the NG router is connected too?
What is the distance between the router and satellite(s)? 30 feet or more is recommended in between RBR and RBS to begin with depending upon building materials when wirelessly connected.
What are the walk materials made up of? Any concrete?

What channels are you using? Auto? Try setting manual channel 1, 6 or 11 on 2.4Ghz and 40 to 48 channel on 5Ghz.
Any Wifi Neighbors near by? If so, how many?
Try disabling the following and see:
Armor, IPv6 and Set 20/40Mhz Coexistence to 40Mhz only. Set Short preamble instead of Long preamble modes. Save settings and reboot the router and satellite(s).

Thanks for your reply on this and sorry for replying late.
For some reasons, it went back as "normal" without any issue for a week or so, and now its going back to randomly poor.
I will try all the settings you mentionned.

I can modifiy the channel for the channel 2.4Ghz but not 5 it's greyed out.
Since I have done the following settings, my satellite are not joining anymore, even by reseting them or bringing them closer..

Check you bufferbloat (it's that word again!) at sites such as dslreports or waveform - for example:

if it's bad, check to see if WMM is enabled.
if it is enabled, put your synology back, and use the Orbi as AP. Then use your Synology to control QOS (I hear Synology is pretty good at it).
Orbi's QOS ability is s*cks (that word again) even with their WMM. Bufferbloat affects gaming a videoconferncing more than raw speed. Because of Orbi's lack of QOS, my wife was having problems with her Zoom meetings, so I put my Asus router back in, using the Orbi as AP.
Bufferbloat went from C/D (with WMM enabled/Orbi routing) to A+/A (Asus routing / QOS enabled / Orbi AP). Wife is happy with Zoom. Happy wife=happy life.

Also can you show us the wireless settings page with the 5Ghz channel being grayed out?
You should be able to select 36 thru 48 for 5Ghz.
Try a different browser by chance?

My first satellite is 10m away from the router, the second satellite is roughly 15m away from the router and roughly 10m from the satelite.
Here are my settings showing the settings for 5Ghz greyed out (it's greyed out with every browsers Chrome, Safari, Firefox..)

The second satellite (which is the one getting poor sometimes) as to cross some concrete wall.
The Netgear router is connected to a UPC router but I don't really see where this is relevant since the UPC router is in bridge mode and I don't have any problems if I am not connected to the satellite I mention having problems.
Is there not logs or anything relevant like stats that could be displayed when I am having this problems so we could say "ok this is coming from this" ??
Most of my pings are between 20-40ms and then randomly going to 150-200ms which is then causing issues with visios and even sometimes zoom showing up "your internet connection is not stable" but I don't have these latencies at the router itself as I have another laptop connected via wire and I am also testing latencies at the same time so I know my wifi is to blame.
