FYI, for a 2000sq ft home. the RBR would only be needed. Maybe one RBS placed at 30feet or more and the power on the RBR turned down to 25%. That size of home and having two RBS place would be too much wifi and maybe the cause of what your seeing. Too Much Wifi: https://youtu.be/UR0viMLISz4
I have a 5000sq ft home and run two RBS and power is at 50-25%. However I don't have same device count either. No issues seen over long periods of time.

I can see the point about WiFi congestion. I’ve taken one of the RBS offline and left the one where I had a weak WiFi issue. I also used a WiFi analyzer to verify that the nearby networks were not all on the same channel (dispersion of channels looks good). I’ll roll with this configuration to see if the issues I’m having returns.
