Does the front LED turn PINK when this happens?
What is the uptime seen on the RBRs web page for Show Stats under Advanced Tab?
Who is your ISP carrier?
What is the Mfr and model# of the Internet Service Providers modem/ONT the NG router is connected too?
Be sure your using a good quality LAN cable between the modem and router. CAT6A STP is recommended.
How many RBS are deployed?
What is the size of your home? Sq Ft?
Is IPv6 enabled or disabled?
Has a power off for 1 minute then back ON with the ISP modem and router been performed since last update?
Be sure to restart your network in this sequence:
Turn off and unplug modem.
Turn off router and computers.
Plug in and turn on modem. Wait 2 minutes for it to connect.
Turn on the router and wait 2 minutes for it to connect.
Turn on computers and rest of network.
Has a factory reset and setup from scratch been performed since last FW update?

Does the front LED turn PINK when this happens? -> Did not see it. As soon the wifi went off, I checked the router and only pulsing white was visible.
What is the uptime seen on the RBRs web page for Show Stats under Advanced Tab? -> Uptime is 37 minutes, in line with the reboot time
Who is your ISP carrier? It is Digi in Hungary
What is the Mfr and model# of the Internet Service Providers modem/ONT the NG router is connected too? -> ZTE ZXHN F6600R
Be sure your using a good quality LAN cable between the modem and router. CAT6A STP is recommended. -> This environment is up and running since a year with good quality cables.
How many RBS are deployed? 1 main unit and 1 satellite
What is the size of your home? Sq Ft? 100 square meter
Is IPv6 enabled or disabled? Disabled
Has a power off for 1 minute then back ON with the ISP modem and router been performed since last update? Yes
Has a factory reset and setup from scratch been performed since last FW update? -> No, and if you don't mind, I won't do it.

Your ISP Modem already has a built in router and wifi. This would be a double NAT (two router) condition which isn't recommended. https://kb.netgear.com/30186/What-is-Double-NAT

Couple of options,
1. Configure the modem for transparent bridge or modem only mode. Then use the Orbi router in router mode. You'll need to contact the ISP for help and information in regards to the modem being bridged correctly.
2. If you can't bridge the modem, disable ALL wifi radios on the modem, configure the modems DMZ/ExposedHost or IP Pass-Through for the IP address the Orbi router gets from the modem. Then you can use the Orbi router in Router mode.
3. Or disable all wifi radios on the modem and connect the Orbi router to the modem, configure AP mode on the Orbi router.

Has a factory reset and setup from scratch been performed since last FW update? -> No, and I'm not willing to do until this is absolutely necessary 🙂
The modem is reconfigured by the ISP in a way, that it is just a modem with wifi fully disabled (modem only mode). Meaning point1 fulfilled.
As I mentioned before, this setup with this modem/router combo works well since over a year. Automatic reboots started just recently.

How long has v.31 FW been installed for?
You'll need to try a factory reset and setup from scratch and see if the problem continues.
A complete pull of the power adapters for a period of time after the factory reset then walk thru the setup wizard and setup from scratch with a wired PC and web browser. https://kb.netgear.com/22697/How-do-I-install-my-NETGEAR-router-using-the-router-web-interface
Recommend setting the default DHCP IP address pool range to the following after applying and a factory reset: 192.168.#.100 to 192.168.#.200.

I would power OFF the ISP modem for 1 minute. Factory reset the router and power it off. Power ON the ISP modem and let it sync. Then power ON the router and walk thru the setup wizard again using a wired PC and a web browser.
Press the back reset button for 15 seconds then release.
