Optimizing performance when used with AT&T Arris BGW210-7000
I have an Orbi 6 router. The model is actually RBR850 (not RBR50). Firmware version is V3.2.18.1_1.4.14. I have connected it to my AT&T Fiber 1gbps service via Ethernet port into the Arris BGW210-700...

Any progress on this?
Even though Orbi is in the IP Pass thru section of your ISP modem/router, it should be getting most of it's traffic thru the IP pass thru feature and not being routed by the modems router portion. You are in a double NAT condition, however IP Pass Thru will work in this condition when connected to a router or gateway modem with a built in router infront of the RBR.

I gave up. There is far too many parameters and I don't see what else I can do or try. I setup the AT&T Arris gateway in IP passthru mode. Internet works on my wireless devices connected to the Orbi 6.
I get high bandwidth of 300-500 mbps but sometimes my kids will say that scrolling on some apps is slow on their phones. I have no idea why. I figured maybe the DNS is an issue because on my windows laptop I often get dns_probe_finished_nxdomain problem for 1-2 seconds and the page loads automatically. But who knows what is going on.
I have no more inputs/parameters to make further progress or debug/triage the problem.

What happens if you remove the IP pass thru on the modem and configure the RBR for AP mode?

Be sure that Traffic Meter is disable on the RBR.

I haven't tried that yet and will try that this weekend.

Those Arris gateway modems can be problematic when it comes to external routers being connected.
30 feet or more is recommended in between RBR and RBS to begin with depending upon building materials when wirelessly connected.
