Can you disable the wifi on the TP-Link router and configure the Orbi router for AP mode and connect it to the TP-Link router and see if this stall still happens?

What Firmware version is currently loaded on the RBR and RBS?
What is the Mfr and model# of the Internet Service Providers modem/ONT the NG router is connected too?
Be sure your using a good quality LAN cable between the modem and router. CAT6 is recommended.

I have currently got the Orbi running in AP mode and so far its working fine, but only been in this config for 24 hours.
However this means I can't use the Family Security feature I paid for - it doesn't work in AP mode.
If my AX73 supported bridge mode, I'd try that so the Orbi could be in router mode, but it doesn't appear to support it (I've logged a case with TPLink).
The ONT Is branded "Chorus Model 200", Chorus is the fibre provider for all of NZ.

Try this with the RBR and your ISP router:
Disable ALL wifi radios on the modem, configure the modems DMZ/ExposedHost or IP Pass-Through for the IP address the Orbi router gets from the modem. Then you can use the Orbi router in Router mode and your security features on the system.
Cabling IS relevant. I'd swap for something new just to be sure.
