Orbi 960 2.4GHz IoT network drops internet

I have an Orbi 960 Series Quad-Band WiFi 6E Mesh system composed of the RBRE960 router with 4 RBSE960 satellites strategically placed around my 6800 sqft home (2 levels + basement).  Currently on firmware version v7.2.6.31 and I often check for updates/restart first when having issues.  I've had an issue come and go that has been prevalent for the last couple of weeks - our 2.4GHz IoT network often says it doesn't have internet access.  I have experienced this by connecting via my laptop and phone to see why our Google, Alexa, TP-Link, Kasa, Sonos, Levolor, Toniebox, Jura, etc. devices are buggy.  Our other networks do not have this issue and the network connection itself doesn't drop - just the internet.  As for my modem, it's a Netgear CM100.  We've had the system for over a year and haven't changed the satellite placement for quite awhile.  Is there anything I can do to resolve this?

Does the main 2.4Ghz network work ok?

How many devices are on the 2.4Ghz IoT network?

Has a power off for 1 minute then back ON with the ISP modem and router and satellites been performed since last update?
Be sure to restart your network in this sequence:
    Turn off and unplug modem.
    Turn off router and computers.
Plug in and turn on modem. Wait 2 minutes for it to connect.
Turn on the router and wait 2 minutes for it to connect.
Turn on computers and rest of network.

Was this all working before updating to v.31?

Thank you for looking into this.  My responses are below.

Yes to my knowledge, only on the IoT.  No issues with computers on the main network (I work from home and read/write large data sets on servers) and our TV streaming has never been a problem. We don't use the guest network often.

I'm not sure, I'll do some testing of this.  I know some of our items need a dedicated 2.4GHz network and can't connect to a network with multiple bans.  However, I know the 5 and 6GHz on the main network work just fine.  Currently our Sonos is on the main network 2.4GHz and buggy, but I believe Sonos is known for having issues.  I'll try switching something else over.

      32 at the moment

Yes, all of this has been done multiple times in the correct order.

Do you know when v.31 was released?  We have had the issue on and off since installing, but the way I observed it was through Google/Alexa saying things like "I'm not connected to the Internet" vs now when I see my phone/computer connect to the network and loose internet while still being connected.  Usually it resolves itself in a day-ish, so I chalked it up to device updates vs my network.  I would say this round has been going on for a couple weeks and is happening across multiple device platforms, so the commonality is my network.  Usually, if I connect to the IoT network, I have internet initially and then it drops after a few minutes (haven't figured out if its consistent timing or any common trigger).

When I look at the Channel Interference, it looks like I might be on one with poor clarity.  Is it possible to switch the channel of the IoT? Or is this done by changing the 2.4GHz channel of the main network? Or irrelevant to what I'm experiencing?

Ya Sonos has there own wifi signal.

Thats a lot. Wondering if you reduced the device count by half if this would be still seen.

Might give a factory reset and setup from scratch. Users have posted lots about v.31 not working well so we've been recommending users revert back to v.21 which is most stable.
