My download speeds is only 65MBs but my upload is 495mbs. MY Internet provide has a download speed of over 500mbs for me when I log into my ISP and run speed test. But when I log into the Orbi is 6...

Yes.
For that size of home you could run the RBR and just one RBS.

Be sure when your speed testing with wireless devices, that they connect to the nearest wifi signal source before testing.

That would be nice but once I pick the network I have no control over if the device connects to the router or the satellite.

This is technically correct. However, the device selects which WiFi access point to associate with based on a number of factors, such as the signal strength. If the signal strength from one Orbi unit is significantly higher than from other units, most devices will choose that one. This is one reason people tend to "spread out" WiFi access points. (The other reason being simple practicality. If two WiFi access points are close together, then their coverage area will overlap significantly and the area with poor coverage will be greater. Someplace about 30 ft. apart is often the "sweet spot" where:
- The total area covered with a good 5G WiFi signal is large, and
- The 5G backhaul signal between router and satellite is strong enough to produce a high backhaul link speed.
For example, my aging RBR50/RBS50 units are about 25 feet apart, with several walls and wooden flooring between them. Even though the technical specifications claim that the backhaul speed between router and satellite can reach 1,733Mbps, the actual measured link speed* is more in the 760-800 Mbps range. With actual throughput being only a fraction of the link speed (WiFi has a LOT of overhead which eats into performance), I am not getting anywhere near "full speed" on the backhaul. The saving grace is that my ISP connection is not one of those fiber gigabit monsters, so even this degraded performance remains higher than my ISP performance. In other words, I suffer no performance penalty.
* The original Orbi had a telnet interface with a function to report the router to satellite links. Netgear has since removed the telnet interface.

Sorry I wandered from the point. When I am close to the router, my phone connects to the router. When I am close to a satellite, the phone connects to the satellite. I am not "in control", but I can influence which WiFi Access Point the phones selects.

You can turn down the power on the RBR which can help steer some devices closer to the other RBS:
Under Advanced Tab/Advanced Settings/Wireless Settings
Try 50%.

Not sure what happened but today my download speed is around 300mbs. Much higher than yesterdays 65mbs. Yesterday I removed one of the two satellites since it was only 15 feet from the router. I rebooted router and sat. rebooted most devices. Late last night I turned off the ISP equipment and router and rebooted both.
