Oh, dear. You appear to have uncovered a flaw in the 760 firmware. May have to "send it back".
The User Manual regarding Option 61 is clear and makes no mention of special characters. (see page 24)

I do not have access to a 760 router. On an RBR750, I entered "my.dog@fun|one" into the Option 61 box. The router took it, "no problem". So, if these special characters were accepted on an RBR50 and my RBR750, my conclusion is that the 760 firmware is defective.
Another option might be to beg the ISP to give you a string with no special characters.

Another reason I suspect a coding error is because of this comment on the current firmware Release Notes:

DHCP options 60/61 have been part of Orbi routers (how long? since 2016? or.....?)
It seems "too weird to believe" that the 760 product was released in March of 2022 without these parameters.
