If it were not so frustrating, this could be fun!
I brought up the WAN Setup page on my old Orbi, put the cursor on the Respond to Ping line, right clicked to "Inspect Element"
I then highlightedd the word 'disabled' and changed it to 'enabled' (see above). That changed the check box to solid instead of grey and I was able to check or uncheck it. I did not click on "Apply" (would be suicide to nertz my Orbi right now)
Maybe you could see if your Orbi has a similar web page?

OpenVPN is enabled on my RBR50, and the "Respond to Ping on.." box is unchecked (and greyed out).
On your RBR350, the box is checked and greyed out?

I have come to accept that Netgear changes options from one version of Orbi to the next, often without any obvious benefit, and certainly without any explanation. This one seems just stupid. Why draw attention to the public IP by responding to pings?
It might be interesting to see if disabling OpenVPN restores the ability to uncheck this box. i.e.
- Go into VPN and "un"enable VPN.
- Restart the Orbi.
- Go into the WLAN options panel and see if the Respond to Ping option can be modified.
- (if so) uncheck it.
- Return to VPN and enable it.

Once you un"enable" VPN, the Respond to Ping option can modified and in fact automatically turns off. The problem is that as soon as you "enable" VPN, it automatically turns on and gray out so you cant modify it.
Previously other people have posted about changing the option via Telnet, however I cant seem to access Telnet on my RBK352.
