Has a factory reset and setup from scratch been performed since last FW update?
Be sure your using a good quality LAN cable between the modem and router. CAT6 is recommended.
"My RBR850 has a number of servers, cameras, and IoT devices in the range 192.168.1.10 - 192.168.1.100. Any other devices connecting use DHCP for 192.168.1.101 onwards." Are the dynamically addressed on the RBR or do you set a IP address reservation on the RBR for these devices?
What channels are you using? Auto? Try Auto and 48 on 5Ghz. Or try setting manual channel 1, 6 or 11 on 2.4Ghz and 40 to 48 channel on 5Ghz.
Any Wifi Neighbors near by? If so, how many?
Have you had the following enabled? Armor, Smart Parental Controls, or Traffic Meter.
Do you have any RBS deployed?
What is the size of your home? Sq Ft?
Is SIP ALG disabled on the RBR?

Has a factory reset and setup from scratch been performed since last FW update?
No. There has never been any direction from NetGear - or any other manufacturer - to perform a factory reset after a firmware upgrade.
Be sure your using a good quality LAN cable between the modem and router. CAT6 is recommended.
I have a good quality CAT6 cable between my fibre ONT and the RBR850.
Are the dynamically addressed on the RBR or do you set a IP address reservation on the RBR for these devices?
Statc IPs are defined directly on most devices. Six IP cameras have MAC address IP reservation.
What channels are you using? Auto? Try Auto and 48 on 5Ghz. Or try setting manual channel 1, 6 or 11 on 2.4Ghz and 40 to 48 channel on 5Ghz.
Any Wifi Neighbors near by? If so, how many?
Wireless connections are unaffected. Internet connectivity is affected.
2.4GHz is on Auto, 5GHz is on 48.
Have you had the following enabled? Armor, Smart Parental Controls, or Traffic Meter.
Armor is not enabled.
Smart Parental Controls are not enabled.
Traffic Meter is not enabled.

As a troubleshooting step, IF problems are seen after a FW update, if after most troubleshooting steps have been tried or exhausted, common last resort step is to factory reset. Been many issues solved by this.

I acknowledge this statement. If the settings changes detailed below do not resolve this issue I will perform a factory reset and reconfiguration.

I understand your question now. I have devices in the range 192.168.1.10 to 100 that either set their own static address or use MAC address reservation. All devices outside of that range use DHCP and are assigned an IP in the range 192.168.1.101 to 254. The devices "seen" by the RBR are in the static range.

There are 5 wifi SSIDs shows under the Network Status, the closest of which is at 82% strength on Channel 4.

I have made the following changes to my Orbi settings:
- Turned off UPnP
- Advanced | Advanced | UPnP | Turn UPnP On | Unchecked
- Adjust Time Settings
- Advanced | Administration | NTP Settings | Set your preferred NTP Server | ca.pool.ntp.org
- Advanced | Administration | NTP Settings | Time Zone | (GMT-07:00) Mountain Time (US & Canada)
- Advanced | Administration | NTP Settings | Time Zone | Automatically adjust for DST
- Turn off SIP ALG
Advanced | Setup | WAN Setup | NAT Filtering | Secured
Advanced | Setup | WAN Setup | Disable SIP ALG | Checked
I've backed up my configuration and will continue testing.
