I appreciate the help guys (FURRYe38, CrimpOn), and thank you for clarifying that CrimpOn much appreciated, I think I'm going to stick to this setup as I didn't see any difference in speed in the master bedroom with it wired or wireless but it effected my office ofc as I'm wired to the satellite and it dropped the speed from 950 to 290 once on wireless so unless I'm able to wire all 3 I'm just going to leave them as they are now which is the old setup with the channel switched and the positions slightly changed to make it sufficient

Distance between the first satellite is around 25 feet or so I can't measure completely as they're both in different attics.
The second satellite was under the stairs central to the ground floor but based on what you're saying I need them 30 feet or further for best compatibility so I moved it into the lounge which is similar to how far away the other satellite is
The wired RBS is connected directly into the back of the RBR no switch or wall jacks and is also wired by using a cat 7 Ethernet
The current channel configs on the router are 2.4GHz is on auto and 5ghz is locked to 108(DFS)

Might try manual channels 1 and 40 on the RBR...
Ya distances are a factor...
Also might try the RBS thats ethernet connected in a wireless sync to see if anything changes behaviors.

I seem to not be able to change my 5Ghz channel for some reason it's greyed and and appears locked or something

Ok. Odd that you cant' change the 5Ghz channel.
Yes, just unplug the ethernet cable and let the RBS wireless sync. Should auto connect on it's own.

The RBR350 product is a "dual band" product (obviously designed to cost less to manufacture and this able to sell at a lower price point). The single 5G WiFi radio is used both for communication between User devices and the system and also for communication between router and satellites. It cannot be changed.

In WiFi, it is up to the user device to decide which WiFi access point to use, both which to connect with first and which to change to. This seems pretty clear that the iPhone has decided there is no benefit from switching from the bedroom satellite to the router.
