RBR850 and RBS850 Connection Drop
I have an RBR850 and two RBS Satellites and AT&T gigabyte internet. My modem and RBR850 have to be in a corner office of the 3000 sqft house. The first RBS850 is connected via backhaul/Ethernet cable...

50' could be a bit too far. Try 40'.
Also try turning down the power output of the RBRs wifi radios from 100% to 50% and see if this changes anything. Under Advanced Tab/Advanced Settings/Wireless Settings
For that size of home, you may have one to many RBS deployed and the phone maybe having a hard time locking on to one particular signal and ping ponging around. https://youtu.be/UR0viMLISz4
Can you turn OFF one RBS for now and observe the behavior with just the RBR and one RBS running?

My modem and RBR850 have to be in a corner office of the 3000 sqft house. The first RBS850 is connected via backhaul/Ethernet cable and is 30’ from the router. The second RBS850 is 30’ from the other satellite and 50’ from the router.
When I walk around the house too quickly with my iPhone 14Pro, I often lose connection in rooms where the satellites are. I cannot sign back on to the wifi unless I walk back the the router room. If I walk very slowly (like unnaturally) to the satellite rooms, then I do not lose connection. Can anybody suggest help? Is the problem that the second satellite is 50’ from the router? Do all satellites need to pull signal from the router? Or can my second satellite pull signal from the first satellite that is only 30’ away?
