RBS750 drops wired connection to RBR 750 and reverts to wireless
House has thick granite walls so CAT5 wiring to every room connected via Netgear GS324 switch. Orbi set up as follows - fibre internet wired to the WAN port on the RBR750, RBR750 wired to the switch...

If things are working, leave it and let it run.
At some point, I'd recommend you downgrade the system back to v.21 and avoid v.31. We can't recommend v.31 currently.
Be sure to save off a back up configuration to file for safe keeping. Saves time if a reset is needed.

Does the RBS connect and maintain connection if you bring the RBS to near or same room as the RBR and ethernet connect it to the back of the RBR? Would be good way to narrow down if cabling or switch is the problem.
CAT5 isn't really rated for 1000Mpbs, max is 100Mbps. CAT6 cabling is recommended.
Please re-verify the FW version.

RBS750 in another part of the house syncs wirelessly (blue LED) but gets poor connection, low data transfer rate. Turned the RBS750 off, wired to the network, restarted the RBS750, got a blue LED and good transfer rate. Orbilogin shows the RBS is connected by wired. But an hour later orbilogin says the RBS is only connected to RBR750 wirelessly, and I can't connect a device to the RBS750 wirelessly. All on latest v7.2.3 61. What am I doing wrong?

Thanks Furrye38, hadn't considered the Cat5 restriction, that could well be it. Can't rewire the house inexpensively though. In fact although Orbilogin describes the backhaul status as Poor it is giving me very near the maximum speed from my fibre internet connection.
