OK, just making sure with the ONT. If that is the case then thats just the interface unit for the ISP services.
First try a factory reset on the 860 after v.15 is loaded on the RBS first, then RBR lastly and after you set the ONT to one of the options above. Hoping that one of the options will eliminate the issue you saw on the Orbi system.
FW versions need to be on same version between the RBR and RBS.

I gave v15 another try but with limited time I just updated without any factory resets. Sats and RBR updated fine and came back online quickly, but within a few mins the ethernet performance from the Mac to the RBR showed the same fault - starts at 900gmps download on the speediest or there about and then quickly drops to near zero.
Reverting back to v7.2.6.31 and ethernet performance was solid 940/900 or there about.
If I get an opportunity I will try a factor reset update but I'm not convinced this is a vital step and nay only be worthwhile when devices crash when updating.

Ya, next you'll need to factory reset and setup from scratch with newer FW loaded. Mine was solid on v.15.

Here's the screen recordings of the Speedtest performed from a MacBook Pro M1 connected via ethernet cable directly into the RBR860 on each version of firmware.
v7.2.7.15 with the issue:
v7.2.6.31 without issue:
