Do you think I should go with a "high end" powerline, meaning 2000 Mb/s or a 1000 Mb/s will be enough? I have a 500 Mb/s ISP speed.

Get AV2 (2000 mbps). The 2000 spec is the link speed, not the delivered throughput (which is MUCH lower).
