I would update the RBS first to v.15 then RBR lastly. v.31 was known to have problems
I've had this version on my 854 series running well and RBS are now ethernet connected. 20+ days of good up time.
I loaded my system, power cycled the system OFF and back ON. Then factory reset and setup from scratch using a wired PC and web browser:

Be sure your using a good quality LAN cable between the modem and router. CAT6A STP is recommended.
What is the size of your home? Sq Ft?
What is the distance between the router 📡 and satellite(s)🛰️? 30 feet or more is recommended in between RBR 📡 and RBS 🛰️ to begin with depending upon building materials when wired or wirelessly connected.

Thank you for the advice! Thank you too for the easily digestible response. I am technical enough to get myself in big trouble but not technical enough to get myself out again. my last attempt at a manual update resulted in my RBK50 turning itself into a brick and never talking to me again...
I have also had a response from the Support team that literally had me pulling my hair out.
Upgrade to the latest firmware they said which they said was 7.2..7.15.
Interesting that when I open the orbi app and actually hit the go update button it says no new firmware available.
however if I go to the support pages, search my model and then go to downloads goes what? Several newer versions.
Once you open the zip file there is a mismatch of 750,800,850 models in the names, instructions and links that makes you squeamish.
Not to mention the random change your MTU and update DNS to 8.8.8.8...
Anyhow, I finally relented and manually updated all FW, unchecked the auto update (but have not yet had the courage to factory reset). Call me chicken if you like but going around and re-adding 20+devices is something that I would rather put off (at least until the weekend).
Here is hoping that I will not see another drop!

If a factory reset is needed, if you use same SSID name and password as before, then your devices will re-connect.
Hope it works well for you. I'm enjoying it on my 850 series.

Thanks for the advice.
That is what I will have to do this evening. Did the updates and now on V7.2.7.15_5.1.16.
Everything came back and running like a dream.
Sat down to watch the Socceroos and streamed it only to have it drop.
Confirmed the drop was on everything and not just what I was watching and kicked the connection which restored the service.
You advice on the ssid will allow me one more shot at this tonight. I will embark on the factory reset then update the SSID to the old one including password and see where we end up.
Failure on this will be to get my money back. Very frustrating when you pay so much for a system and then have these issues....

Any of the front Orbi units turning PINK when this happens?
Also what channels are you using?
I'm using 1 and 40 here.
Be sure your ISP modem is in bridge mode or using the DMZ for the RBR and the modems wifi radios are fully disabled.
If your ISP Modem already has a built in router and wifi. This would be a double NAT (two router) condition which isn't recommended. https://kb.netgear.com/30186/What-is-Double-NAT

Couple of options,
1. Configure the modem for transparent bridge or modem only mode. Then use the Orbi router in router mode. You'll need to contact the ISP for help and information in regards to the modem being bridged correctly.
2. If you can't bridge the modem, disable ALL wifi radios on the modem, configure the modems DMZ/ExposedHost or IP Pass-Through for the IP address the Orbi router gets from the modem. Then you can use the Orbi router in Router mode.
3. Or disable all wifi radios on the modem and connect the Orbi router to the modem, configure AP mode on the Orbi router.
