but the whole of point of choosing this router was for the wpa3/wifi6 capability running it in limp mode seems counterintuitive, could it be done with a rasperry pi and a printer server?

Something to ask the printer Mfr about. It's there product that doesn't support WPA3. It needs WPA2 or try ethernet if the printer supports that.
