How to verify Wifi 7 from Orbi RBE971

Funny enough the 340 is depended on what region you live in they dont seem to allow ppl outside of the usa and Canada to select the 340 which is weird in my opinion

No.
Any WiFi7 or MLO will be indicated on the connecting device and shown on the RBR connected device web page. When 5+6Ghz is seen here, this indicates WiFi7 and MLO are active and being supported.

The 970 shows WiFi 7 and in effect MLO on the router admin web page, As you may know, MLO stands for Multi-Link Operation, and it’s one of the key new features in Wi-Fi 7 (IEEE 802.11be). MLO works across the 5 and 6GHz frequency bands (for Netgear - the spec supports using 2.4 band too), not necessarily using the older Wi-Fi 5 protocol. All the links are Wi-Fi 7 protocol (or at least 6E/7), just operating across different spectrum bands.
So is there a 7GHz frequency band? No! There isn’t a new frequency band unique to Wi-Fi 7. Instead, Wi-Fi 7 operates across existing frequency bands, just like Wi-Fi 6 and 6E. But the magic is in how it uses them.
So go to the Attached Devices list after logging in at 192.168.1.1. There is a 'connection type' column, which will be 2.4GHx, 5, 6, or '5GHz+6GHz' (see image below). This is WiFi 7, using MLO.
While you can see MLO being used, which is a WiFi 7 capability, indicating a device is using WiFi 7, you cannot see 320MHz channel width or 4096-QAM anywhere I know of - even though Netgear advertises it's supported on the 970 Orbi series:
