What brand and model# is this NG Switch?
For wired BH to work, need the following configuration:
Fiber Internet cable to router outside interface
Router inside interface cable to Orbi RBR WAN Port
netgear switch port 1 to Orbi RBR LAN port.
Netgear switch port 3 to Orbi RBS #1
Netgear switch port 4 to Orbi RBS #2

I was going to say something similar. Wired backhaul works fine in the proper setup. I do use my Netgear 971 as a router not an AP, but with Eth BH I am getting multi gig on laptops.
The big issue I see is as FURRYe38 said you have the router and satellites connected to an unmanaged switch and then to outside interface. The Netgear router needs to be on the other side of the switch, with the satellites then plugged into the switch. Use FURRYe38 's recommended config and see what you get.

Page 23-23 shows the connection if in Routing mode, not access point mode. Which ports should I be using on the RBR for this to work? Same for the RBS in Access Point mode? Does it make a difference?

Regardless of router mode or AP mode, the WAN port is needed to connect to the primary internet host, then the RBS when ethernet connected have to be connected behind the RBR. IF there is a switch needed, this switch needs to be connected behind the RBR on one of the LAN ports.
