Hello, I bought AX8 AX5700 from Costco 2 weeks ago and I’m facing the same issue as you explained, the management software freezes. I can still access the router remotely from the app which helps me to reboot.
I have Comcast internet with the SB6190 Arris modem connecting to my router RAX75. Any help would be appreciated.

Update: Yesterday I checked the log of my modem SB6190, it had many events of CMTS rejection and all downlink channels were having large numbers on uncorrectables. upon googling for use of multiple known CPE which might have caused the router management software to freeze. As of now I am monitoring the logs and will check if the router freezes again.
