They go for the "best" signal. If 5 GHz (or even 6 GHz if your router supports it) is strong enough, the client will connect to that.
2.4 GHz is slower but has a longer range, so clients may switch from one to the other as you move around. Most of my 5 GHz kit sticks to that, but I have an MK93 Mesh system.
Devices that are 2.5 GHz only will, of course, just connect to that.
