RAX43v2 Media Server Stopping and Re-scanning
I have a RAX43v2 router with attached USB drive on which I have stored .mp4 movies. When watching these via the router's media server to our TV, the server will randomly "reset", drop the connection...

The movies are stored on a portable hard drive, a 2 tb Easystore. I also have a 4 tb WD My Book that I use for other NAS service. My previous router, a Linksys, had 2 USB ports and this set up worked well. Never a problem with movie playing. When I purchased this RAX43, I wanted to keep the same arrangement but with only 1 usb port, I connected a hub to utilize both drives. After reading your post, I wondered if the hub might be causing the problem. Last night, I removed it, directly connected the movie HD to the router and watched a 1 hour show without difficulty. Not conclusive at this point if that is the problem, only time will tell. I am also considering the first reply to my posting about creating a standalone media server as a more robust solution.

If you're just starting out, try to find one with an halfway-new ish Intel processor. You want quicksync built in. Their quicksync does great with hardware transcoding so you can have a lower-performing processor but still transcode decently. I'd look at Jellyfin or Emby for first starting off. They're free to use and support hardware transcoding. Plex is free as well but you have to pay for the premium subscription for hardware transcoding.
Once you start going the media server route, you rarely go back. I went from a small 1tb hard drive connected to my router (years ago) to now a 32tb media server with GPU transcoding 4k videos. So much better if you like streaming your own media or are on a data cap and needing local storage.
